 In food processing, sodium bicarbonate is the most widely used leavening agent. It is used in the production of biscuits, bread, etc. However, excessive use can result in residual sodium bicarbonate, leading to an overly alkaline taste, inferior flavor, and a yellow-brown color. It is used as a carbon dioxide generator in carbonated beverages. It can be combined with alum as an alkaline leavening powder, or with soda ash as household soda. It can also be used as a preservative for butter. In vegetable processing, it can be used as a color protector. Adding about 0.1% to 0.2% of sodium bicarbonate when washing fruits and vegetables can stabilize their green color. When used as a treatment for fruits and vegetables, sodium bicarbonate increases the pH value, improves the water-holding capacity of proteins, softens the texture of food tissues, and dissolves astringent compounds. Additionally, it has a deodorizing effect on goat's milk, with a usage rate of 0.001% to 0.002%.
